KFC Colonels Kitchen Tour

With social media being a big part of our lives, it can be used for many things good and bad. Unfortunately a lot of the latter, and one of the main problems facing social media is the spreading of fake news. Fake news spreads like wild fire and could prove to be very harmful to the subject at hand, which is why I urge people to search for the truth first before just sharing these stories and very often than not, the truth is very easy to find. KFC have been hurt in the past with such fake news about how they go about preparing their chicken, hence they launched their Colonels Kitchen Tour, which see's them going around the country to random branches of KFC, inviting local media and influential personnel to get a behind the scenes experience of what goes down in the kitchen of a general KFC.

Last week the tour stopped off at KFC Gateway and I was part of a lucky few to who attended. After formalities were complete it was time to go into the kitchen and the first thing that gets your attention is how strict their are on hygiene, well obviously it is a food prep area but the controls put in place to ensure that this standard is met not only amazed me but others on the tour. From wearing hairnets at all times to washing your hands every 30 minutes or after touching other areas of your body, KFC do not take cleanliness lightly. Especially since most of the food prep involves staff using their hands to make your food.

We were given a detailed step by step demo on what happens from the time the product is delivered, to how its stored, chilled then prepped to cook, what temperatures are needed for them to accept deliveries and if the product doesn't meet their standards it is sent back. There is a freezer where the chicken product is stored and a chiller for other products. The chicken is defrosted, checked for any defects such as bruises or feathers, then dunked in water, drained by being shaken 7 times then added to breading station which consists of flour, the secret 11 herbs and spices and other additives. The chicken is then folded 10 times in the mixture, ensuring every part is coated perfectly, drumsticks get a double coat as when frying it tends to lose some coating if only coated once. Then the chicken is patted down 7 times to make sure everything sticks on. This procedure is called the 7/10/7 which is performed every time when making chicken. The pieces are then placed on frying racks, and each piece has its own place on the rack ensuring a thorough cooking process.

All of KFC's chicken products are cooked in high pressure fryers, for 15 minutes, ensuring that the chicken is golden crispy and perfect every time. Oil in these fryers are checked daily with an oil checker made especially for these fryers. We then moved onto the food prep are to see where all the delicious burgers, wraps and orders are made. The food prep station is spotless with all the cooked products available to the person who is making it in the various warmers which are labelled accordingly. Food is assembled in a matter of minutes and sent out to dispatch. It's astonishing the workings behind the scenes and many take it for granted as we don't get to see what goes on. This tour helped dispel those myths and fake news about how things go down in the kitchen at KFC and left me pleasantly surprised to see the measures put in place by KFC SA, speaking to the owner of the store after the tour, he said how they'd get inspectors coming to look for even the most smallest things, that is how far they go to ensure the stores are spic and span.

It was a long morning and things do get hot in the kitchen so after seeing them make all this delicious food, we were treated to a lunch time feast which no one could say no to!

Krispy Kreme Durban

Well if you didn't know already, Krispy Kreme has hit the East Coast of South Africa! Yes, the doors were officially open to the public this morning at 7am and judging by the mass sleep-out over night, many of the locals couldn't wait to get their hands on the sugary goodness! I was lucky enough to attend the VIP opening on Monday night where members of the media and local celebs got to experience not only the delicious selection of donuts and drinks but also go behind the scenes to see how the donuts are made!

With much fanfare, the VIP opening was all that it was hyped up to be, with local artists consisting of Kyle Deutsch, DJ Deemo and Sketchy Bongo wowing the crowds with their chart topping hits and the Fudart food truck providing mouth watering burgers to whet the appetites of the guests before the opening of the store. Guests were then led in by limited numbers so they could get the full Krispy Kreme experience. Servers greeted us with big smiles and asked us to select any 12 donuts of our choice to fill up the dozen box, the selection is phenomenal! From the original glazed to the gourmet, of which the New York Cheesecake was my favourite, everything was packed and fresh! Along with our box of 12, each guest received a dozen of original glaze to go along with it.

Next up was choosing our beverage of choice, Krispy Kreme is renowned for their great coffee's which compliment their donuts oh so well but being Durban, I needed something to cool me down from the humidity. They have a great range of chilled drinks too, I opted for the Peanut butter & cookie milkshake which was incredible! We were then given a guided tour of the kitchen, which started off with the making of the dough for the great donuts, it then gets put into the giant donut making machine, called the 270, which can make 3274 donuts in an hour on full production! The dough makes it way through the cutters which cut and shape it, it then goes through the proving conveyor and then dropped into the hot oil river, flipped over to ensure even frying and then almost immediately gets galzed to seal in that freshness and great flavour. It is essentially ready to eat right then but they pass through a cooler which cools them down for further prep.

For the gourmet donuts, they then get taken to different stations for the various toppings. I tried my hand and making a few and I have to say, it's a skillful art that needs lots of patience and lots of practice to perfect! Working with the delicate donuts is no easy feat as I learned the hard way with my first failed attempt but eventually I sort of got the hang of it and got a thumbs up from Kwanele my helpful supervisor. All in all it was a great experience and a fantastic way to summon the opening of a great global franchise on our door steps. I can foresee myself going back again and again for more Krispy Kremey goodness, and if you're in the Umhlanga area, be on the look out for the "Hot Now" red sign, which this is switched on, it means there is fresh donuts in production!

The secret was let out a few weeks ago at Gateways Out The Box event but yes, the big news is that the popular American Doughnut franchise is coming to the east coast! Krispy Kreme is set to open its first store outside the Guateng Province at the Gateway Theatre of Shopping, Umhlanga, Kwa-Zulu Natal in March next year. With the shopping centre winning numerous accolades including the Daily News Your Choice "Best Shopping Centre" award, it was evident why it was chosen for their location of choice in KZN. "Krispy Kreme South Africa is extremely proud and excited to share the joy that is Krispy Kreme with Durban and creates wonderful memories" says Krispy Kreme South Africa CEO, Gerry Thomas.

The international brand that is Krispy Kreme has been around for 79 years and with Gateway being one of Africa's leading and most prestigious shopping centres, the opening of this Krispy Kreme store symbolizes a prominent step in the brands local journey. The first flagship store was opened in 2015, there after saw an additional four Krispy Kreme outlets opening around Gauteng, at the Gautrain Sandton Station, Mall of Africa, Clearwater Mall and Sandton City respectively. There also plan on opening another two more stores before year end at Menlyn Park Shopping Centre and Eastgate Shopping Centre in November and December respectively.

"It is strategic to Krispy Kreme South Africa's rollout that we open stores in major regional shopping centers. Krispy Kreme South Africa are very fortunate to have secured a prime location in Gateway Theatre of Shopping, making this launch all more exciting", said Thmas. He went on to say "The Gateway Theatre of Shopping is Durban's superior retail node and as a prremium international braand, this locaation is the perfect fit for Krispy Kreme. The store position is also well seituated as the samler Krispy Kreme fresh stores planned for Durban's other major centers wiill be supplied out of the Gateway factory production store."

Bucket Scene: The Hussar Grill

When I first heard that The Hussar Grill was opening a branch in Durban I was over the moon, I've heard a lot of this legendary grill from my mates in Cape Town but whenever I find myself in Mountain-land, I never got a chance to experience dinning at one of their many branches. Like most men, I love my meat, and whilst there's many grill houses already in Durban, not many keep that consistancy. One can easily cock-up a steak and it's never a pleasant experience especially if you're paying top dollar for it.

This is where establishments like The Hussar Grill come in, with over 50 years of experience, they're regarded as one of South Africa's Premier Grill Rooms and with good reason too. They have a loyal following and the reason they keep coming back is for their award-winning speciality steaks and wine selection, along with their superb service an warm ambience.

This week myself a few mates decided to go give The Hussar Grill a try, with a booking made, it was time to see what all the fuss was about. Upon arrival I was warmly greeted by their gorgeous hostess at the entrance and then escorted to my table. The decor of the place is great, the low lighting sets the tone for a relaxed lounge feel and the restaurants theme sort of an old school library / wine cellar vibe. They're known for their great selection of wines but I'm not a wine person as I prefer my whisky, our waiter for the night was quick to go through their extensive range of single malts and mixed blends with me, I was quite surprised with the selction they have as many restaurants just cater with the popular ones.

Once I had my drink it was time to study the food menu, I'll be honest I already had in mind what I was going to order as I had a good look at the menu from their website prior to arriving. While doing so, our waiter brought some sweet potato crisps and marinated olives to snack on, both of which got snapped up in a matter of minutes. For starters, everything on the menu looks great and you really want to order more than one but when you flip over to have a look at the mains, you want to keep space for that. I eventually settled for calamari as its a personal favourite starter of mine, it was light and tender, crispy on the outside and with the right about of lemon on it. The accompanying tartar sauce was just as exquisite. Even though it is a starter, it was quite a generous portion and could well easily be shared with someone.

While taking a break with some more good quality whisky, it was time to decide on the mains, the Hussar does have specilas on the day so be sure to check with your waiter when you do visit. Otherwise their menu has enough for to cater for anyones taste buds, whether it be beef, lamb, seafood, poultry or even game, depending on the hunt. Our waiter brought through their meat board to show us the various cuts and explain to us how it is prepared and what is the best way to order it. The menu also offers guidlines to your selection of how you would like your meal grilled. I opted for something off the menu, as the waitor informed me they had lamb steaks, not often you would find this around, lamb is best done medium and it was basted with their rib marinade, served with a side of chips, creamed spinach and a cheese sauce.

It was quite a decent portion of meat, 250g of lamb with just a sliver of fat, crispened nicely. It was full of flavour and most importantly, tender and melted in my mouth. I also opt for a cheese sauce and I enjoy the taste of it with the lamb. They say you know a meal is good when everyone at the table is quiet and enjoying their meal but its not always the case as with us, each of my mates were raving about their meal, insisting what they ordered was better than the next. There was only one way to settle this, as we all tasted a little bit from each others plates. I honestly couldn't fault any dish I tasted, as everything was prepared perfectly and tasted great. In the end we all agreed that there was no dish better than the other as all were pretty darn good.

Already stuffed, the waiter brought the menu's again to have a look at the dessert menu and as tempting as it was, I just couldn't eat anything else. But one that did catch my eye was the Hussar Grill Ice Cream, it's described so incredibly on the menu that it almost hypnotises you to order it "This extravagant dessert is a beguiling combination of vanilla ice cream, peanut brittle, marshmallow, nougat, honeycomb and sprinkled nuts. Drizzled with our signature dark chocolate sauce. Sometimes more is better." I mean if that isn't worthy to get your drooling I don't know what is.

Overall my experience at The Hussar Grill was everything I expected it to be, and a perfect location of a boys night out but equally can be a great place to have a quiet dinner with a loved one, family or even a business luncheon or dinner. Another thing to note as I have mentioned their selction of wines before but if you opt to bring in your own bottle, they do not charge you a corkage free! The prices are very keen when you look at the level of service and quality of food you're getting. I highly reccommend you visit the Hussar Grill to see for yourself why they're one of the best.

Red Bull Manny Mania 2012

Its that time of the year again, Red Bull Manny Mania time. This year 15 of the countries top contestants will descend upon the skate park at Gateways Wavehouse to compete against each other for a spot in the finals in NYC. The 2012 edition of Red Bull Manny Mania will be the third installment of the contest locally.

Just a quick reminder to those who are not sure what the contest is about. The popular skateboard trick the ‘manual’ trick aka, the ‘manny’. A Manny is essentially a skateboarding 'wheelie' - a balancing act that is a must-do in any new skateboarder’s skill set but can be made extremely difficult with limitless combinations.

I attended last years event as was blown away by the talent we've got here in Durbs. Not an avid skateboarder myself I stood aside in awe from what I saw. Kids pulling off some of the most insane, fearless tricks on their boards. Not giving a damn if they could injure them self, just trying there best to impress the judges and in the end of it all, just having fun.

This year however, things are a bit different. Contestants were asked to submit video compalations of them self to Red Bull Manny Mania judges and from there they selected who would make it through to this weekends competition. The lucky 15 from around the country that were invited to this weekends event are:
